Chicken Souvlaki With Homemade Tzatziki Sauce
After our family visited the Greek Isles last summer, I realized the Greeks know how to keep cool in the heat! We spent the day learning some traditional greek dishes from a woman named Teta from Mykonian Spiti. Chicken Souvlaki, this grilled, lemon-marinated chicken breast is cooked on the grill, sliced up, and served on Stonefire Naan Bread with this creamy and cooling Tzatziki Sauce – It is a mixture of greek yogurt, shredded cucumbers, dill, & garlic. Serve it with a side Greek salad and you’ve got a great, Mediterranean-inspired dinner! FYI – The chicken does not have to be served as a sandwich. Click Below For The Recipes:

Sesame-Lime Chicken Salad
This is one of my favorites from Real Simple Magazine – An Asian-inspired recipe that is so easy because it uses rotisserie chicken! You can pull it together in less than 15 minutes – and there is no cooking involved! I make it with butter lettuce (you can cut up the lettuce yourself or just buy a bag of butter lettuce). Avocado Corn Southwestern Salad
Another GREAT recipe from Real Simple Magazine! This salad is vegetarian and is the perfect, protein packed meal! Serve it up as a salad or you can eat it with tortilla chips, or even wrap it up in a wrap! It combines avocado, fresh corn kernels, beans and a simple avocado-lime-cilantro-cumin dressing.
