Sweet Potato Stackers

 

My family LOVES sweet potatoes! I served these and they were a BIG hit, so I believe I will serve them for Thanksgiving this year. Buttery layers of sweet potatoes with rosemary and garlic and fresh parmesan cheese – my mouth is watering just thinking about them!

These are a different way to serve those delectable, spuds of the South! And best part? No mini marshmallows!

Buttery layers of sweet potatoes, paired with rosemary, garlic and fresh parmesan - these Sweet Potato Stackers are sure to be a hit at the next family gathering!

Ingredients
  • 4-5 sweet potatoes, washed, peeled and sliced into thin slices.
  • 2 Tablespoons melted butter
  • 2 Tablespoons olive oil
  • 1 teaspoon freshly chopped rosemary (plus another teaspoon for topping at end)
  • ½ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 2-4 Tablespoons fresh grated parmesan cheese (plus 2 TBS for topping at end)
  • salt & pepper to taste
Instructions
  1. Preheat the oven to 375 degrees.
  2. Combine in a large bowl the melted butter, olive oil, rosemary, garlic powder, onion powder, salt and pepper and whisk until they ingredients are blended.
  3. Add freshly grated parmesan cheese and lightly wish.
  4. Add sliced sweet potatoes to the bowl and mix until all slices are coated in the oil mixture.
  5. In a light greased muffing tin, layer the sweet potatoes until each tin is filled to the top. These will shrink down while they cook.
  6. Cook for 45-55 minutes, or until the potatoes are lightly browned and are tender.
  7. Place on a plate and top with more parmesan cheese and fresh chopped rosemary. Serve immediately.

Apple Pie Sangria

This is a perfect cocktail to serve at Thanksgiving or any Fall event! This makes a large batch – you can cut the recipe in half and have a nice amount for 6-8 people.

A sweet sangria perfect for Fall events like Thanksgiving! Make the day ahead so all the flavors blend together.

Ingredients
  • 2 bottle sweet wine, like resiling or muscato
  • 5 cups fresh apple cider
  • 2 cups ginger ale
  • 2 cups caramel flavored vodka
  • 3 honey crisp apple, cored & chopped
  • 3 pears, cored & chopped
  • 2 cinnamon sticks
Instructions
  1. In a large serving container, add the pears and apples. Add the remaining ingredients, except for the cinnamon sticks. Stir well and cover. Refrigerate overnight (or at least 6 hours).
  2. About 4 hours before serving, add the cinnamon sticks.
  3. Optional: Remove a cup or two of the apples and pears and place in bowl to add to glasses. (Keep in mind, the fruit is now soaked in alcohol, so don't give to kids or pets!)
  4. Serve over ice!

Chocolate Spiced Truffles

I was amazed at how simple this recipe is! My friends at The Spice & Tea Exchange gave me this recipe – they are a wonderful source for rich spices and flavored teas! If you ever have a chance to go to their store in St. Augustine, FL, it is a treat for your senses! The smells of the spices, the beautiful jars of spices and specialty teas – Wonderful!

The basic recipe is as follows:

Chocolate Truffles

Ingredients:

  • 1 Cup heavy whipping cream
  • 11 oz. Bittersweet chocolate or semi sweet chocolate (I used bittersweet for a dark, rich flavor)
  • 1-2 Tablespoons favorite liqueur  (My suggestions: brandy, rum, spiced rum, Chambord, Kahlua or other favorite.)

Assorted Spices and Other Toppings:

Preparation:

Place the chocolate in a medium heat-proof bowl.  Scald the cream in a small saucepan, pour over the chocolate, and let stand for 5 minutes.

Whisk gently until fully incorporated, add the liqueur and stir until smooth.

Place in fridge until it has hardened. Scoop out about 1 tsp of the cold ganache and roll it into a truffle.  Roll in favorite sugars or spices, then chill until firm. Serve at room temperature.

Simple Holiday Survival Recipe: Turkey Breast Of Wonder (Crockpot)

I did not make up the title of this recipe, but I have to be in full agreement with the title!  I discovered this recipe online on the site JaimeCooksItUp.com, a great site with lots of family friendly recipes. My first reaction was, “Yuck, turkey in a crockpot?”, but then I thought about how simple it sounded. And how great this would be for, perhaps, someone with very little room in their kitchen or oven (like apartment dwellers). A perfect way to save space in the mad dash to cook up a Thanksgiving Day meal!

I made the recipe a week ago, with the intention of taking photos of the final product. Well, the final product was so good, there was nothing left to take pictures of! (Photos are taken directly from JaimeCooksItUp.com!)

Though the skin was not golden brown like when you roast the turkey, this dish was seriously good, easy to make, and the turkey was very moist and fell off the bone!  And the drippings left in the crockpot make a TASTY gravy!

Ingredients:

  • One 5-6 pound turkey breast (bone in)
  • 1/2 Cup Orange Juice (or chicken broth)
  • One packet Lipton Onion Soup Mix
  • One can whole cranberry sauce (14 oz.)
  • Salt & Pepper to taste (I did not use salt, because soup mix had enough for me!)

 

Place turkey breast in crockpot (be sure crockpot is large enough- you need to make sure the lid will fit over the turkey!).

In a bowl or measuring cup, mix together the OJ, onion soup mix and cranberry sauce. Pour mixture over the turkey breast, cover with lid, and let cook on low for 8-9 hours.

Simple Holiday Survival: Gluten Free Guests And Holiday Meals

 

Holidays are a wonderful time to bring family to the table to share meals and enjoy time together, but what do you do when extended family or friends are gluten intolerant? Make Gluten Free side dishes that everyone will love! It doesn’t take much to do gluten free, and your family won’t be able to taste the difference!  Tammy Barr, personal chef and owner of Change Your Crave, gives some simple tips and recipes to help you provide gluten free options for your guests.

Food ingredient lists don’t include the actual word for gluten, so it can be difficult to know if something is gluten free. You can look for a few Warning Words: Caramel Coloring, Malt, Barley, Rye, and Monosodium Glutamate. These ingredients are usually derived from wheat products or contain gluten.

The easiest way to make sure the items you buy are gluten free is to look for the GF symbol on the shelf tags at your grocery store. You can usually find these in the organic aisle, and these are products specifically marketed/approved as gluten free.

Try one or both of these simple and TASTY recipes, both provided by Chef Tammy. No one will know they are gluten free!

Gluten Free Classic Thanksgiving Stuffing

Ingredients:

  • 1 loaf white sliced Gluten Free bread (Tammy likes to use Udi White Sandwich Bread), toast each piece
  • 1 large onion, finely chopped
  • 3 tablespoons chopped fresh garlic (or to taste)
  • 1/2 cup butter (no substitutes!)
  • 4 large celery ribs, chopped
  • 1 tablespoon poultry seasoning
  • 1 tablespoon Kosher salt
  • 1 -2 teaspoon fresh ground black pepper
  • 1 (10 ounce) can water chestnuts, drained and coarsely chopped
  • 1 C Sliced Almonds
  • 3 C Turkey Broth or Turkey drippings if you have them
Directions:
  1. Toast all the bread slices and cut into cubes.
  2. Melt butter in a large skillet over medium heat until HOT and sizzling.
  3. Add in onions, garlic and celery, stir immediately with wooden spoon; add in the poultry seasoning, Kosher salt and black pepper; sauté for about 5-6 minutes, or until onions are translucent.
  4. Stir in the chopped water chestnuts, sliced almonds and cubed GF toast cubes; toss well to combine.
  5. Add the turkey broth 1 cup at a time.  Carefully combine so bread does not completely fall apart. Continue adding broth until everything is well combined.
  6. Transfer into a baking dish and drizzle Olive Oil over the top.
  7. Bake for 20 minutes at 360 degrees.
Enjoy!!

Gluten Free Classic Thanksgiving Gravy

Ingredients:

  • 1 stick butter
  • 4 cups pan drippings from turkey (or see **Options below the recipe)
  • 1 can evaporated milk
  • 1/2 cup brown rice flour
  • 1/2 teaspoon black pepper (I use freshly ground pepper)

Directions: 

  1. Drain the pan drippings for the roasted turkey through a fine strainer.
  2. Let sit and then remove any fat from the top of the drippings.
  3. Add in chicken broth or water to make 4 cups if necessary.
  4. In a medium saucepan, melt butter.
  5. Add in black pepper.
  6. Add in 1/2 cup brown rice flour; constantly whisk for about 3 minutes over low heat.
  7. Slowly add in the evaporated milk and then 4 cups turkey broth/drippings; whisk constantly over medium-low heat until bubbly and thickened (about 3 minutes).
  8. Use right away or keep warm over lowest heat setting, whisk again before serving.

**Options: You can use more evaporated milk or drippings to thin out if it’s too thick.

Simple Holiday Survival Recipe: Peppermint Bark

Another favorite of Simple Solutions Diva, Peppermint Bark is an easy candy to make at the holidays!  This recipe uses dark chocolate chips, but you can use semi-sweet or milk chocolate, if you prefer.

Ingredients:

Two 10 oz. bags of Nestle Dark Chocolate Chips

Two 12 oz bags of Nestle White Chocolate Chips

3  tsp. canola oil – divided

1 tsp. peppermint extract – divided

25 candy canes or peppermint candies, crushed

Directions:

In a microwave-safe bowl, combine dark chocolate chips, 1 1/2 tsp. canola oil, and 1/2 tsp. peppermint extract, and microwave according to chocolate chip package directions (approx. 2.5 minutes on 70% power – stirring every 30 seconds until smooth).

Line a cookie sheet with wax paper and pour warm chocolate chip mixture into pan, spreading mixture to the edges.  Refrigerate until hardened, approx. 1 hour.

Once dark chocolate layer is hardened, begin second layer.  In clean, microwave-safe bowl, combine white chocolate chips, 1 1/2 tsp. canola oil, and 1/2 tsp. peppermint extract, and microwave according to chocolate chip package directions (approx. 2.5 minutes on 70% power – stirring every 30 seconds until smooth).

Pour white chocolate mixture over hardened dark chocolate mixture, quickly spreading mixture to the edges. Sprinkle crushed peppermint candies over top of mixture, and gently press candies into mixture.  Refrigerate until it is hardened.
Break into small pieces and store in air-tight containers.  Enjoy!

Simple Solutions Diva’s Favorite Homemade Treat – Reindeer Crunch

With four different types of crunchy cereals, combined with pretzels, chocolate candies and white chocolate, this mixture is addictive! Almost makes it hard to give away!

One of my favorite holiday homemade food gifts is Reindeer Crunch!  My sister-in-law gave this as a gift (thanks Debbie!) to us years ago, and it has become a staple as teacher gifts, hostess gifts, and more during the holidays.  Best of all, kids can get involved — or in my case, as teenagers, they take over the job!

You can alter the recipe based on your preferences. We replace the almond and peanut M&M’s with regular M&Ms when giving as gifts, out of concern for allergies.

Here is the recipe as given to me!  Enjoy!

Reindeer Crunch Recipe

Ingredients:

3 Cups Each of the Following:

  • Cheerios
  • Corn Chex
  • Wheat Chex
  • Rice Chex
  • Small knot pretzels

1/2 bag Plain Holiday M&M’s, Large Bag (19.20 oz.bag)

1/2 bag Almond Holiday M&M’s, Large Bag

1/2 bag Peanut M&M’s, large Bag

1 1/2 bag Nestle White Chocolate Chips

Directions:

Mix all ingredients (except white chocolate chips) in a large bowl. Melt chocolate chips according to package directions (To make it easy with kids, I use microwave directions).  Pour melted chocolate chips over the mixture, and gently mix together until all is well coated.  Spread on wax paper to dry.  Break into smaller pieces and enjoy!

Be sure to store in airtight containers, or ziplock bags.

You can re-name the above mixture based on the holiday: Cupid’s Food, Bunny Food, Uncle Sam Mix, Goblin Food!
