A Simple Super Bowl Recipe To Make Ahead: Easy Stromboli

You can sit back and enjoy the game with this great recipe! Assemble several of them ahead of time, keep them in the fridge, and bake them when your guests arrive!

Easy Stromboli

StromboliMakes one Stromboli that feeds 4 people.

 Ingredients:

  • 1 10 oz. can of refrigerated pizza dough (or you can use dough pre-made from your grocery store).
  • 2/3 cup shredded mozzarella
  • 2-3 slices of provolone cheese
  • 6 oz. of your favorite italian meat – you can use pepperoni, sausage, prosciutto, salami, or a combination of both! I used pre-sliced italian selection of meats available at Publix.**
  • 2 Roasted red peppers, cut into long strips. I used jarred roasted red peppers.
  • Marinara Sauce for dipping

** Note: You can easily make this without meat by substituting your favorite veggies, chopped small. Use broccoli, basil, olives, banana peppers, onions, green peppers, mushrooms, and so much more! (My favorite combo-Basil, Mozzarella, Provolone, Red Peppers) Anything you’d want on a pizza can be thrown into a stromboli! If you are adding other meats, like chicken, just make sure they are fully cooked before using them in this recipe.

Directions:

Preheat oven to 375 degrees.  Place pizza stone in oven to preheat. (or use a baking pan, sprayed with cooking spray)

On a lightly floured work surface, press out pizza dough into a rectangle (approximately 9″x12″).

Layer the provolone and mozzarella cheeses on the dough, leaving a clean border of 1/2″ to 1″ all around. Top with the meats and red pepper.

Roll the dough (lengthwise) like a jelly roll, and seal the edges of it all around.*** Place on the pizza stone (or pan), seam-side down.

Bake at 375 degrees for about 25 minutes until golden brown.

Slice and serve with warm marinara sauce on the side for dipping.

*** To seal the ends of the stromboli, moisten with water, fold over, and press (on my second attempt, I used a fork to put a crimp like a pie crust and it stayed sealed!). If you don’t seal it well, you could have a blowout! See photo below. Another great way to prevent blow outs is to add a few vent holes/slits on top of the stromboli to allow the steam to vent!

Cold Weather Calls For Warm Soup: Beef and Barley Soup

I love making a hearty soup on a cold winter’s day. This Beef and Barley Soup is easy, flavorful and really warms you up! I love it when my kids ask if I made this from scratch, and I can say “YES”!

Warm and Hearty Beef & Barley Soup from SimpleSolutionsDiva.com.

Ingredients:

  • 1 pound sirloin tip steak, cubed
  • 1 Tablespoon flour
  • 1-2 Tablespoons olive oil
  • 2 cups water
  • 1/2 teaspoon ground thyme
  • 1/2 teaspoon ground black pepper
  • 2 cloves garlic, pressed
  • 2 bay leaves
  • 1 pound carrots, sliced
  • 1 can (16 oz.) crushed tomatoes
  • 1 cup barley (I used quick cooking)
  • 1/2 teaspoon salt (optional)

 Preparation:

Place cubed steak and flour into a gallon-sized zip-lock plastic bag; close and shake, thoroughly covering steak with flour.

Heat olive oil in heavy soup/stock pot over medium heat. Add flour-covered steak to oil and brown meat.  Add water to pot, covering the meat and let simmer until meat is tender (approx. one hour). Note: Do not drain off fluid – this is the homemade beef stock for the soup!

Add thyme, pepper, garlic, bay leaves, tomatoes, and carrots to pot (add salt, if desired). Simmer until carrots are tender (approx. 1 hour).

Add barley and let simmer until barley is cooked (with quick cook barley, takes approximately 20 minutes).  Feel free to add 1/2 cup water if soup is too thick.

Serve with crusty bread!

Note: I let this simmer all afternoon, then add the quick cooking barley in the last half hour of cooking.

Plan a Giving 2014 New Year

This is a great idea for a family celebration! Each family member submits several family volunteering ideas for 2014; Use New Year’s Day to decide, as a group, what volunteer opportunities the family will commit to for 2014 and schedule them into your calendar. Giving back and helping others really makes life enjoyable!

Create a Decorative Jar filled with memories collected over 2014; near New Year’s 2014, open the jar and relive the fun memories from 2014!

  • A Clean Glass Jar
  • Small, blank tags, cards, or bookmarks (I used bookmarks)
  • Chalkboard Self-Stick Labels (I got this little packet, including chalk, for $1.00 at Michaels!)
  • Decorative Pen

Instructions: 

Clean the jar and remove all sticky price labels. Let dry. Apply the chalkboard label to the glass jar.  Write 2014 on the chalkboard label. Add blank bookmarks or cards and a pen. Place Jar in active place in the house (ours is in the kitchen). As fun events or memories happen, write them down on the blank cards and place them in the jar.  At the end of year, sit down with family and revisit all the fun times over 2014 by reading the cards aloud.  Wipe 2014 off with a slight damp cloth, and write the new year and start all over again!

Pick a time in the early evening to invite the kids over and toast the New Year early with DIY Noise Makers and a Cookies & Milk “Midnight” Toast!

  • Empty and clean water bottles, with labels removed.
  • Craft Beads
  • Variety of stickers

Instructions:

Add a handful of craft beads to the empty water bottles and secure the top. Lay out the stickers and let the kids decorate their own shaker.

Cookies & Milk “Midnight Toast Supplies:

  • “Fancy” glasses (these can be champagne glasses, wine glasses or whatever works for you)
  • Hot Fudge Sauce (I used Smucker’s brand)
  • Colored Sprinkles
  • Milk
  • Chocolate Chip or M&M cookies (I bought mine pre-made from the grocery store)

Instructions:

Using a knife or back of a spoon, rim the top of the glasses with room-temperature hot fudge sauce. Pour sprinkles into a bowl or small plate. Roll the fudge covered rims of the glasses in the sprinkles, so sprinkles adhere to the glass & fudge. Fill with milk. Place a cookie on top of glass and serve.

Simple Holiday Survival Recipe: Turkey Breast Of Wonder (Crockpot)

I did not make up the title of this recipe, but I have to be in full agreement with the title!  I discovered this recipe online on the site JaimeCooksItUp.com, a great site with lots of family friendly recipes. My first reaction was, “Yuck, turkey in a crockpot?”, but then I thought about how simple it sounded. And how great this would be for, perhaps, someone with very little room in their kitchen or oven (like apartment dwellers). A perfect way to save space in the mad dash to cook up a Thanksgiving Day meal!

I made the recipe a week ago, with the intention of taking photos of the final product. Well, the final product was so good, there was nothing left to take pictures of! (Photos are taken directly from JaimeCooksItUp.com!)

Though the skin was not golden brown like when you roast the turkey, this dish was seriously good, easy to make, and the turkey was very moist and fell off the bone!  And the drippings left in the crockpot make a TASTY gravy!

Ingredients:

  • One 5-6 pound turkey breast (bone in)
  • 1/2 Cup Orange Juice (or chicken broth)
  • One packet Lipton Onion Soup Mix
  • One can whole cranberry sauce (14 oz.)
  • Salt & Pepper to taste (I did not use salt, because soup mix had enough for me!)

 

Place turkey breast in crockpot (be sure crockpot is large enough- you need to make sure the lid will fit over the turkey!).

In a bowl or measuring cup, mix together the OJ, onion soup mix and cranberry sauce. Pour mixture over the turkey breast, cover with lid, and let cook on low for 8-9 hours.

Simple Holiday Survival: Top Spices For The Holidays


Did you know spices have a shelf life?  Humidity, heat, sunlight, and exposure to air can pull the flavor and aroma right out of spices and dried herbs. With the holidays here, now is the perfect time to replace those holiday spices you bought last year!  Colleen Messner of The Spice & Tea Exchange in St. Augustine, Florida, has a list of the top spices you should have in your cabinet for the holidays. (And most of them can be used year round!)

Nutmeg

Nutmeg – This brown seed, when grated, provides a warm, spicy/sweet flavor to dishes. A whole seed can be stored indefinitely in an airtight container. Best when freshly grated.

 

Allspice – This spice tastes/smells like a combination of cinnamon, cloves, and nutmeg. I love it on pork tenderloin!

Cloves – This fragrant, nail-head shaped spice is perfect for decorating a ham or whole orange. Imparts a warm and sweet flavor.

Green Pod Cardamom

Green Pod Cardamom – Cardamom has a strong, unique spicy-sweet taste. Best when purchased in pods, which are removed and discarded before grinding the seeds. Adds great flavor to danish and other pastries.

Star Anise

 Star Anise – Sweet/warm spice with a licorice flavor. Great to use in pastries, stews or even asian cooking (It is one element in Chinese 5 Spice Blend).

Candied Ginger – Perfect to use in gingerbread or even chopped as decorative (and tasty!) topping for cupcakes!

Cinnamon – The favorite in the Simple Solutions Diva household! Warm and sweet, cinnamon works well in so many recipes during the holidays!

 

Storage Tips

  • Keep all spices in a dark, cool and dry place, away from heat. (So I guess that means I need to move my spice shelves away from the stove!)
  • Leafy items, such as oregano, basil, bay leaves do best when stored in the fridge.
